  • for 6 papanasi we have nevioe:
  • 200 gr fattened cow fat
  • 2 eggs
  • peel from an orange
  • 1 sachet of baking powder
  • 5 tablespoons sugar
  • powdered sugar
  • 1 sachet of vanilla sugar
  • flour
  • oil
  • sour cream
  • sweet cherry

Put the charcoal, eggs, sugar and vanilla sugar in a bowl and mix well to incorporate them all, then add the orange peel, flour and baking powder so as to obtain an elastic dough. Divide the dough into 6 then take a little dough from each particle, from this we make balls and from the 6 some bigger balls that we flatten and make a hole in the middle, to fry better. Put enough oil in a pan to fry the papanasi. After they are ready, remove them on paper towels to remove excess oil. Then place the ball over the donut, put the cream on top and the cherry jam or any jam you have in the pantry.


Method of preparation

In a bowl put the cheese, eggs, sugar and mix them at a very low speed.

Add semolina, vanilla bean sugar, grated lemon and orange peel, baking powder.

Now we start to gradually incorporate the flour until the composition becomes non-sticky but it doesn't have to be very hard but like a plasticine.

Let the prepared composition rest for 15 minutes.

Put a larger amount of oil in a frying pan.

We break the right pieces of dough, form balls, drill them in the middle and give them the shape of rings.

We fry them in hot oil on both sides, and from the dough in the hole we form balls that we fry.

Using a spatula, take out the papanas in a bowl in which we put some kitchen napkins.

As I have been trying to avoid frying for some time, I stopped a little dough and made some papanasi in the oven.

We shape them in the same way as the ones we fried, we place them in a tray lined with baking paper.

Put them in the hot oven and let them brown nicely on top.

Wash the strawberries, remove the tails and crush them with the vertical mixer.

Pour everything into a saucepan, put 1-2 tablespoons of sugar and let it simmer for about 5 minutes, then let it cool.

We put papanasi on the plates, sprinkle them with powdered sugar and put sauce on top and let it flow down, but we definitely make sure to enjoy it all!


1. Wash the strawberries well and clean them of the stalks, then cut them in halves or quarters. Sprinkle them with half the sugar and leave them in a tightly closed container for at least 24 hours or until they leave as much syrup as possible.
3. Strain the strawberry syrup and refrigerate it in a bottle overnight. Separately, over the remaining strawberries, pour the refined double alcohol or homemade brandy and leave them overnight.
✽ Thus, you will get all the color and aroma from strawberries, in the maceration made overnight.
5. In the morning, combine strawberry syrup and alcohol soaked with strawberry flavor.

6. Combine the remaining 100 g of sugar with 200 ml of water and bring the syrup to a boil, then pour it over the strawberries.
7. Pour the strawberry into perfectly sealed bottles and store them in the pantry or in places away from light.

Yogurt can be replaced with sour cream. The syrup can be replaced with any favorite jam.

Papanas fried with cheese and served with sour cream and jam are part of childhood desserts. These fluffy and fragrant donuts were often prepared by my mother or grandmother, and I was in the landscape just to devour as many of them as possible.

I loved this dessert, but I rarely prepare it. In the last few weeks, my thoughts have been slipping towards these delicious papanasi, bathed in sour cream and blueberry jam. And since you can't get over your appetite, I quickly went to the market to buy cheese and sour cream.

The cheese must be good, fresh and as dry as possible, because this way it will not absorb a lot of flour and the papanas will be fluffy. If the cheese is wet, the amount of flour used will increase and the papanas will be stronger.

The papanas recipe is simple and quick to prepare.

Ingredients for the recipe for fried papanasi recipe with cheese:

  • 500 gr of cottage cheese
  • 2 eggs
  • 60 grams of sugar
  • The peel of an organic lemon
  • Vanilla essence
  • 1 pinch of salt
  • 1 teaspoon baking powder
  • 1 tablespoon grated semolina (optional)
  • 320-350 gr of flour (depending on cheese and eggs)
  • Frying oil
  • Cream or yogurt for serving
  • Jam or jam to serve

In a bowl, I mixed the cottage cheese with the two eggs, the sugar, the grated lemon peel, the vanilla essence and the salt. With the help of a fruculite I ground the cheese finely and I homogenized the ingredients. I then added flour, baking powder and semolina. I kneaded the dough, then covered it and left it in the fridge for at least 30 minutes. During this time the flour and semolina will absorb more moisture.


After I took the dough out of the fridge, I greased my hands with oil and divided the dough into 8 large balls and 8 small balls. I flattened the big balls and with the help of my finger I made a hole in the middle of them. In this way I shaped the papanas. I rounded the small balls well, because they will be the top of the dessert.

I heated oil in a pan and fried the papanas for approx. 4 minutes turning them on both sides, or until they turn golden. I took them out on the kitchen napkins to get rid of the excess oil, then I served the papanasis with sour cream and blueberry jam in abundance.


The pappas were fluffy, slightly crispy on the outside and absolutely delicious!
