Veal dish with peppers and onions

It was raining outside, Adrian is sleeping, my husband is sleeping on TV thinking about what matches I am today, and instead of resting, I am cooking and in the meantime I am posting another recipe :).

I found veal at the store and because now is the pepper season I thought of making a stew with peppers and onions, a little spicy as we like. It goes best with polenta but if you make a mashed potato or rice no one is upset :)

  • 1 kg of veal pulp
  • 2 large peppers or donuts
  • 2 onions
  • 300ml mashed tomatoes
  • 2 bay leaves
  • 1/2 teaspoon corn
  • 1 teaspoon sweet paprika
  • 1/2 teaspoon hot pepper
  • salt
  • a little bit of oil

Cut the meat into cubes and fry over high heat in a little oil.

Add diced peppers, finely chopped onion and mix well. Leave for a few minutes and then add the paprika, mix well and about 300ml of water.

We also put the bay leaf, let it boil then let it simmer, covered for an hour.

Add the mashed tomatoes, marjoram and chopped hot pepper (optional). Let it simmer on low heat for about 30 minutes until the meat is cooked and reduce the sauce and then season with salt, fresh pepper, hot pepper.

Serve hot with polenta and pickles.

It is advisable to use a pan with thick walls (not necessarily the kettle as I used)

The amount of water varies depending on the meat. If the meat boils harder, you need to add more water.

If you want at the end you can add chopped green garlic, it gives it a wonderful taste.

Calf stew like at home mom

We clean the onion, wash it and finely chop it and put it to harden in a bowl in which we heated the oil a little. Immediately add the finely chopped pepper. Let it harden a little and add the peeled tomato and cut into small cubes (in order to peel the tomato more easily, put it in hot water for 1 minute).

While the tomato is cooking a bit, cut the meat into cubes and place it over the vegetables. Stir and leave on the fire for about 5 minutes, then add the pepper paste, pour 2 cups of water and simmer with a lid on top. From time to time we mix and in the meantime we add salt and pepper. Bringing to a boil over low heat, we get a thicker and more delicious sauce with a good taste of beef.

When the meat is fully cooked (always check with a fork), turn off the heat and add chopped green parsley. While the stew is slowly boiling, we can also boil the potatoes for the mashed potatoes. I'm not going to tell you what to do for a tasty puree because I'm sure everyone knows how to do it.

We serve hot stew with mashed potatoes and the best pickles on earth, that is, those from my mother :).
