Remove from the heat and leave covered with a lid for 10 minutes. Mix the yolks with the sugar in a bowl until a cream is obtained. Add the hot milk, stirring slowly. Stir the cream over low heat until it starts to thicken. Remove the pan from the heat and allow to cool. Remove the vanilla pod and add the sour cream. Put this composition in an ice cream machine, according to the instructions. If you do not use an ice cream machine, put the composition in the freezer and mix every 30 minutes.

The operation is repeated every 2 hours, at least 3 times. Serve with a few slices of melon next to it or with a chocolate or flavored fruit sauce.

Spread a dough on a work surface sprinkled with flour, grease it with water and place the other sheet of dough on top.

Spread with a rolling pin so that the dough sheets intertwine. Grease the dough once more with water, and from right to left fold in the middle as many times until you get a square of approx. 25 x 25 cm. Cover the dough with cling film and leave it in the fridge for at least 1 hour.

From the dough cut into a shape 9 circles (diameter 8 cm). With a small shape, cut a hole in the middle of the dough circle.

Heat the oil in a deep fryer or pot at 180 ° C. Fry the dough circles one by one, for 3-4 minutes until golden brown, turn and fry on the other side for another 3-4 minutes. Drain the donuts on a paper towel and allow to cool.

Beat the vanilla pudding. Cut large raspberries, incorporate with pudding and pour into a saucepan.

Cut the donuts horizontally and fill with vanilla cream and raspberries.

Melt the glaze according to the instructions on the package and color it, if desired, with food red. Cronuts are greased with icing and can be decorated with sugar pearls.
