This is an easy leg of lamb recipe that has been in my family for years. Roast until the internal temperature of the meat is at least 70 C.

  • 1 tablespoon freshly ground black pepper
  • 1 teaspoon salt
  • 5 cloves garlic, cut into slivers
  • 2 sprigs fresh rosemary
  • 400g (14 oz) passata

  1. Preheat the oven to 190 C / Gas mark 5.
  2. Rub the leg of lamb all over with salt and pepper. Use a small knife to make punctures in the lamb. Press slivers of garlic into each hole so that they are about 1cm below the surface.
  3. Place the lamb in a roasting tin. You can either remove the rosemary from the stem and rub into the lamb on all sides, or you can simply use the string from the lamb to secure the entire sprig against it. Pour the passata over the lamb.
  4. Bake for 45 minutes in the preheated oven, then lower the temperature to 160 C / Gas mark 3, and continue roasting until the internal temperature of the meat is at least 70 C, about 15 minutes. If you want the lamb well done, wait until the internal temperature reaches 75 C.

Yum very different from traditional roast lamb.-10 Sep 2012

I cooked this leg of lamb exactly as the preparations directions described, even though I question a baking time of 45 minutes @ 375 and then another 15 minutes. The leg of lamb was raw and it ruined our New Years Day dinner. I was very disappointed as was my family. You need to be a little more specific for baking time-01 Jan 2008

I'm giving this 5 stars on ease! The flavor is also very good. I doubled the garlic, used finely crush dried rosemary and sprinkled with some garlic salt after pouring on the tomato sauce. I suggest you keep a thermometer in the meat and keep an eye on it. Everyone's oven is a little different. 4 hours would have been way past well done for my roast. This is a fabulous roast for Sunday supper! I'll do it again and again..rave reviews from the family. Garlic, Italian herbs, cayenne, salt and olive oil on baby red potatoes is a great compliment..put into oven last hour of lamb roast. EASY and elegant-21 Apr 2003

How to Slow Roast a Leg of Lamb?

Slow Roasting a leg of lamb is so easy. For this Keto Leg of Lamb recipe I used a combination of roasting and braising in the cooking process.

I start by rubbing my leg of lamb (roughly 4 pounds) with ghee and patting on a dry rub of seasonings.

Then I bake it (uncovered) in THIS Beautiful DUTCH OVEN at 450 for 30 minutes. This high heat blast is done in place of browning it on the stove. It’s less fussy and less messy.

After your leg of lamb was browned in the oven, reduce the oven temp to 315 and remove the leg.

Add to your dutch oven (and browned leg of lamb) onions, garlic and bay leaves…

Then add liquids chicken broth, lemon juice AND wine!

Yes, you can! Any lamb cut, bone and all!, leg, shoulder or shank can be roasted in a pot on the stovetop. Just like when making chicken pot roast, it is necessary to use a pan or pot large enough to fit the meat into. This enables even cooking. The meat will cook within its own moisture so keep the pot closed during cooking. I recommend a heavy-based or non-stick pot or pan. If you are using an aluminium or stainless steel pot then simply cook on lower the heat to avoid burning.


  • 1 (5 to 6 pound) boneless leg of lamb (should come tied up, if not, have the butcher tie it for roasting)
  • 2 lemons (juiced)
  • 6 cloves garlic (crushed)
  • 1/4 cup fresh rosemary (chopped)
  • 1 teaspoon dried thyme
  • 1 teaspoon fresh ground black pepper
  • 2 tablespoons olive oil
  • Kosher salt (as needed)

Combine all the ingredients, except for the olive oil and salt, in a large bowl.

Rub the leg of lamb thoroughly with the marinade until coated. You may even push some herbs and garlic into any cracks and crevices.

Place the lamb in a plastic bag, and marinade in the refrigerator overnight, or for at least 6 hours.

Remove the lamb from the fridge, and let sit out for 45 minutes to come up to room temperature.

Remove the lamb from the marinade and place on a rack in a large roasting pan. Rub with the olive oil, and season very generously with the salt. Keep the side with the most fat facing up.

Roast for 15 minutes in the hot oven to begin browning the surface.

Then reduce the oven to 315 F. and roast for approximately 10 minutes per pound (for a 5 to 6 pound leg this will be about an hour).

The best method for checking the doneness is using a digital meat thermometer and removing the lamb when the internal temp reaches 135 F. This will give you a nice pink and juicy roast. Let the lamb rest for at least 20 minutes before slicing. It's best sliced thin, against the grain of the meat.

Roast Leg of Lamb

Cook Time: 2 hours

Total Time: 2 hours and 10 minutes

Ingredients

4 garlic cloves, thinly sliced

Kosher salt and freshly ground black pepper, to taste

2 tablespoons olive oil, divided

Directions

1. Preheat the oven to 350°. Using a sharp knife, score the fat cap on the lamb in a crosshatch pattern.

2. In a small bowl, toss the garlic and oregano with some salt and pepper. Rub the mixture into the scores of the lamb, seasoning with more salt and pepper as needed. Rub the lemon juice over the lamb, then brush it with 1 tablespoon of the olive oil. Wrap the leg with parchment paper then secure with butcher's twine. Brush the paper with the remaining tablespoon of oil, then place the whole leg in a roasting pan.

3. Roast until golden brown and the internal temperature reaches 140°, 2 hours. Let rest for 5 minutes, then discard the paper and string, and carve, serving the slices with the pan juices.
