Finely chop the onion and fry in oil until it becomes glassy. Add the diced potatoes and cook together until the potatoes are soft, then add the broccoli pieces. Add enough water to cover the vegetables and boil under the lid. Pay attention to the amount of water, it is a creamy soup! When the vegetables are cooked, mix the composition with the blender. In the soup mix add sour cream, salt, pepper and half the amount of gorgonzola. Mix for another minute to homogenize the cheese.
Serve in small soup bowls and garnish with gorgonzola left broken into small pieces.
